I love white fish, especially cod. It has such a nice firm texture, that everybody can make it! This is the way my mom always cooked it when I was growing up, and although now I have a lot of fish recipes under my belt, this one is special as it reminds me of my childhood. Even now, when I visit my parents, mom prepares it the same way- with fried onions on top. Yum!
