I love apple season! Crispy, sweet, bursting with flavor and nutrients, apple are so good for us. But for me this season also means baking. I know apples are available all year round, so why am I so excited? Well, because this time of year I have a lot of them at home, and because the memories from my childhood when I spent time in the kitchen with my mom making apple jam, baking apple pies, cakes, cookies, will always have a special place in my heart.

No matter how many apples I have at home, every time I go grocery shopping I buy more. I just cannot resist, they are so beautiful :)

Well, this morning I have decided we (my husband and I) are in the mood for muffins, so I quickly gathered all the ingredients and ended up with delicious, aromatic warm muffins. My husband and I didn’t notice how quickly they disappeared!

You will need:

1/4 C butter (or coconut oil), softened

1/3 C  sour cream

2/3 C sugar

2 large eggs

1 1/2 C all-purpose flour

3-4 apples (2 Cups cubed)

1 Tbs lemon juice

zest of 1 lemon

1 tsp pure vanilla extract

1/2 tsp lemon extract (optional)

pinch or salt

How to make:

Preheat oven to 385 F.

Peel and core apples (I use a melon baller for that, it’s very convenient).

Cut apples in cubes, mix with 1 Tbs lemon juice (to prevent turning brown), and set aside.2 (2)

Beat butter, sour cream and sugar until fluffy, add eggs, one at a time, and continue beating until the mixture becomes light.

Add vanilla extract, lemon extract and lemon zest. Fold in our cubed apples.

Line muffin pan with paper cups, and fill them with apple mixture. This amount of dough is enough for 12 medium muffins.

Bake at 385 for 20 minutes, or until the muffins are golden brown, and a toothpick inserted in the center of one of them comes out clean.
