Apple Buttermilk Pancakes
Pancakes…Who doesn’t love them:) Honestly, I try not to make them at all because then I just cannot stop eating….But today my son is home from college, and I want to spoil him a little (well, and myself too I guess
Buttermilk pancakes are my favorite, and this morning I have decided to add apples to the batter. The result- heavenly deliciousness! The crunch of apples, hint of cinnamon…add to that a dollop of sour cream (or yogurt) and a little of maple syrup (or honey), and your taste buds will be happy:)
If you have fresh cherries or try my favorite canned ones, you can make Cherry Buttermilk Pancakes too.
1 ½ C all purpose flour
2-3 Tbs sugar
1 tsp baking powder
1/2 tsp baking soda
1 tsp salt
1 tsp cinnamon
1 1/2 C buttermilk (I make my own buttermilk)
1 Tbs coconut oil, melted (plus additional for frying)
1 tsp vanilla
4 medium sized apples (3 peeled and diced into small cubes, and 1 grated)
Toppings: sour cream or yogurt
maple syrup or honey
In a large bowl, whisk together all dry ingredients.
Cut 3 apples in small cubes
In a separate bowl, whisk together all wet ingredients.
Add wet ingredients to dry, and whisk together until just combined.
Add apples to the wet ingredients, grate the 4th apple and add it to the mixture
Heat a cast iron pan over medium heat, add 1 tsp of coconut oil, and start adding your batter to the pan by the tablespoon.
Cook until bubbles appear on the pancake. Flip the pancakes and fry a few more minutes on the other side.
Continue with the rest of the pancake mixture adding coconut oil to the pan as needed.
Transfer the pancakes to the plate, add a dollop of sour cream and some maple syrup.
