Avocado, Corn and Tomato salad

My friend shared this recipe with me, and when I heard what ingredients she used to make it I knew right away that I will absolutely love it! Avocados, corn, tomatoes and cilantro go so well together! The only difference between her salad and mine is that she uses fresh grilled corn, and I put frozen corn in it. I just defrosted it and used in my salad, without cooking.

If you don’t like cilantro ( I just happen to love it!) use your favorite herbs, I am sure the salad will be very tasty anyway:)

Ingredients:

1 Haas avocado

2 cups grape tomatoes (or your favorite tomatoes- I added one small yellow as well-not in the photo above, I just decided to use it after I took the photo)

I cup of corn

cilantro (I used 1/3 cup of loosely packed leaves, but you decide how much you will like)

1 t lemon zest

sprinkle of lemon juice

1/2 tsp sugar (optional)

salt and cracked black pepper to taste

olive oil

How to make it:

Cut avocados in cubes and using a spoon take the flesh out. Put in a bowl

Cut tomatoes- if using grape tomatoes cut them in half, if regular- in cubes. Add to avocados along with corn

Add the rest of the ingredients. Mix and enjoy!
